The rich green color of leafy greens is the indicator of the antioxidants that make these vegetables one of the best “Super Foods” to incorporate into your regular diet. The selection of greens is wide and there is no reason to become bored with a simple salad every day. Did you know that calorie for calorie; some of these greens are the most nutrient packed foods that your body will love? I enjoy introducing kale, spinach, collards, and arugula in everything from soups to juice, from snacks to entrees.
Kale has to be an all-time favorite of mine and I don’t mean as a garnish on the salad bar. It’s one of the healthiest greens for your bones. Just one cup of cooked kale contains 1,300% of the RDV of vitamin K. Kale also is a high in calcium and makes a great alternative to dairy which helps promote bone density.
Next time you’re at the market, which preferably is outside, spend another dollar or two and pick-up a bunch and experiment. You will be pleasantly surprised how wonderful they are.
Need a few ideas? Well try some of my favorites.
-Try using kale, arugula, or spinach in your next salad with or without the lettuce.
-Blend a few leaves with banana, pineapple and your favorite protein powder for a power boosting breakfast.
-Braise your collard greens with fresh garlic, crushed red chili flakes, sea salt and a splash of apple cider vinegar.
